White Panther breeds the Styrian mountain shrimp, also known as the white tiger shrimp (Latin: Lithopenaeus vannamei).

Most of the flavor is concentrated in the heads of the crustaceans. To achieve an even more intense flavor, we recommend using the whole shrimp.
The shrimp heads can be used to make shrimp soup (bisque), shrimp butter, or shrimp stock. The shell protects the shrimp from drying out, especially when grilling.

Mountain shrimp do not have an adaptive immune system and are therefore highly susceptible to disease. To meet strict hygiene standards and protect our animals from external environmental factors, we raise them in a controlled indoor facility. In addition, we can better regulate the temperature indoors, thereby creating species-appropriate living conditions.

The EU Organic Regulation stipulates that animals should be raised under conditions similar to those in their natural environment, which also applies to the design of the tanks.
Since the tanks in our indoor aquaculture system must be made of PE materials to ensure optimal hygiene and breeding conditions, the EU Organic Regulation does not accept this arrangement. We consider our indoor farming method to be the most sustainable way to raise shrimp, as we farm completely free of additives and at very low stocking densities. Our mountain shrimp are harvested and killed using ice water (hypothermia).
Mountain shrimp spend their entire lives in water at 28\u00b0 C; a scientifically tested and evaluated hypothermia method (ice water) is used to rapidly halt their metabolism in a manner that ensures animal welfare. The Styrian mountain shrimp (Lithopenaeus vannamei) adapts the coloration of its carapace to its surroundings.
Since the tanks in which the shrimp are raised are black and the shrimp are optimally nourished with a balanced diet, they adapt their color to their surroundings.
For the purpose of species conservation, White Panther also breeds Western Blue Shrimp (Lithopenaeus stylirostris), which we call the blue shrimp.

This color change is related to the interaction between the protein crustacyanin and the pigment astaxanthin. Astaxanthin is a carotenoid and is also responsible for the characteristic color of tomatoes, oranges, and carrots. When heated, the structure of crustacyanin changes in such a way that astaxanthin can no longer bind to it. With the molecule now free, the red coloration becomes dominant. This is related to the wavelengths of light that a particular substance absorbs or reflects. Carotenoids absorb blue and green light and reflect the red\/orange portion of the spectrum; the shrimp takes on its characteristic color. <\/p>\n<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t\t
