The term “shrimp” refers to various species of crustaceans that live on the seafloor or swim freely. Shrimps, prawns, gambas, Arctic shrimp, North Sea shrimp, and krevetten—these terms all refer to essentially the same animal: the shrimp. However, marine animals with claws—such as lobsters, spiny lobsters, scampi, or crabs—do not belong to the shrimp family.
White Panther breeds the Styrian mountain shrimp, also known as the white tiger shrimp (Latin: Lithopenaeus vannamei).
Breeding begins in Styria with the parent birds at the breeding facility, which is currently the only one of its kind in Europe.
Vannamei shrimp (Vanna mountain shrimp) are colloquially known as “White Tiger shrimp”; in reference to Styria’s heraldic animal—the heraldic panther—we call our mountain shrimp “White Panther mountain shrimp.”
Most of the flavor is concentrated in the heads of the crustaceans. To achieve an even more intense flavor, we recommend using the whole shrimp.
The shrimp heads can be used to make shrimp soup (bisque), shrimp butter, or shrimp stock. The shell protects the shrimp from drying out, especially when grilling.
For those in a hurry, we also offer Styrian mountain shrimp as “Easy Peel” (without heads, with shells, deveined) or peeled and deveined.
As an appetizer or side dish, we recommend serving 2–3 shrimp (whole shrimp: approx. 60 g; Easy Peel: approx. 40 g; peeled: approx. 30 g).
If served as a main course, we recommend approx. 5 shrimp.

No. For perishable and easily spoiled food products, there is a statutory exception to the right of withdrawal (Section 18 of the Distance and Off-Premises Sales Act (FAGG)).
Styrofoam box (Post-Next Fresh Day):
The black reusable Styrofoam box, along with the ice packs it contains, must be returned to
after attaching the return label (located on the underside of the lid upon arrival) to the top of the lid
. You can either hand it back to the mail carrier immediately or drop it off at a post office.
White Panther will charge for any mailboxes and ice packs that are not returned.
Shipping Box (Corrugated Cardboard):
Our small shipping box is made from recycled cardboard; even the waste paper panels used for insulation,
, are made from natural materials.
You can reuse the ice packs included inside multiple times after storing them in the freezer.
Do not return the shipping box to White Panther. You can dispose of the recycled paper components in the organic waste or compost, or use them as kindling for wood-burning stoves.
The Gebirgsgarnelenshop is open daily from 9:00 a.m. to 4:00 p.m., except on Saturdays.

Mountain shrimp do not have an adaptive immune system and are therefore highly susceptible to disease. To meet strict hygiene standards and protect our animals from external environmental factors, we raise them in a controlled indoor facility. In addition, we can better regulate the temperature indoors, thereby creating species-appropriate living conditions.
Through our unique indoor farming system, we have created a sustainable closed-loop system that enables us to raise fresh mountain shrimp year-round.
Depending on their stage of development, mountain shrimp feed on algae they grow themselves, brine shrimp (Artemia), and selected dried, ground, and pressed species-appropriate feeds with a high protein content.
The EU Organic Regulation stipulates that animals should be raised under conditions similar to those in their natural environment, which also applies to the design of the tanks.
Since the tanks in our indoor aquaculture system must be made of PE materials to ensure optimal hygiene and breeding conditions, the EU Organic Regulation does not accept this arrangement. We consider our indoor farming method to be the most sustainable way to raise shrimp, as we farm completely free of additives and at very low stocking densities. Animal welfare is our top priority.
Our mountain shrimp are harvested and killed using ice water (hypothermia).
Mountain shrimp spend their entire lives in water at 28° C; a scientifically tested and evaluated hypothermia method (ice water) is used to rapidly halt their metabolism in a manner that ensures animal welfare. This method has been validated by the Alfred Wegener Institute and the Austrian Center for Animal Welfare.
The Styrian mountain shrimp (Lithopenaeus vannamei) adapts the coloration of its carapace to its surroundings.
Since the tanks in which the shrimp are raised are black and the shrimp are optimally nourished with a balanced diet, they adapt their color to their surroundings.
For the purpose of species conservation, White Panther also breeds Western Blue Shrimp (Lithopenaeus stylirostris), which we call the blue shrimp.
The Stylirostris shrimp has an intense royal blue coloration.
This color change is related to the interaction between the protein crustacyanin and the pigment astaxanthin. Astaxanthin is a carotenoid and is also responsible for the characteristic color of tomatoes, oranges, and carrots. When heated, the structure of crustacyanin changes in such a way that astaxanthin can no longer bind to it. With the molecule now free, the red coloration becomes dominant. This is related to the wavelengths of light that a particular substance absorbs or reflects. Carotenoids absorb blue and green light and reflect the red/orange portion of the spectrum; the shrimp takes on its characteristic color.

At White Panther, everything is used and nothing is wasted.
Shrimp that are too small, as well as shrimp heads and shells, are processed into the highest-quality shrimp powder.
The shrimp powder is a natural source of umami, as it contains a high proportion of L-glutamine.
It gives all dishes—including vegetables, fish, and meat—a well-rounded and harmonious, comforting flavor.
The mountain shrimp are harvested fresh three times a week, and deliveries to our customers take place continuously every week from Tuesday through Thursday.
Our images may be used unaltered on social media, provided that “White Panther” is credited as the source. A link and the hashtag #whitepanthergebirgsgarnele must be included. We welcome collaboration requests from content creators.
Adapting the images through editing or modification using AI is not permitted.
