HATCHERY - THE HATCHERY

The Heart of the Styrian Mountain Shrimp

White Panther Produktion GmbH has been producing postlarvae from artificially created saltwater since 2019. The breeding process and the postlarvae are free of pollutants, antibiotics, and chemical additives.

The postlarvae are used for our own mountain shrimp breeding program, but are also available for sale to other shrimp producers.

All parent animals have been tested by GENICS to ensure they are free of viruses.

Our Quality Standards for Postlarvae

We have strict quality control standards that must be met before the postlarvae are shipped. We regularly test our broodstock for a wide range of shrimp diseases so that we can guarantee the health of all larvae. In addition, we guarantee a minimum size of 8–11 mm (CV 15–20) for the shrimp.

Our hatchery is supplied with fresh spring water from the Rottenmann Mountains, which is heated to 30°C and enriched only with salt and minerals. This process, carried out far from the sea, offers protection against many diseases and thus provides significant advantages compared to international standards.

High standards while ensuring animal welfare

The genetic program we have implemented is tailored to indoor Styrian mountain shrimp farms and complies with Austrian animal welfare, quality, and hygiene standards. Our indoor farming method excludes the use of chemical substances, as this would significantly disrupt the biological water chemistry. We never manually intervene to time egg-laying; we leavethe timing of egg-layingto nature.

Transporting Postlarvae Out into the Wide World

Europe-wide transport is carried out stress-free by land. To keep transit times as short as possible in the interest of animal welfare, additional routes outside Europe are handled via air freight. We also offer a consulting service and feed for post-larvae.

Perfection

BREEDING

Grow-out tanks covering 6,000 m²

Our 6,000 m² grow-out facility spans two floors. During the hall’s construction, we prioritized sustainability and durability. Given the use of saltwater, we minimized the use of reinforced concrete and stainless steel. Instead, we relied on our own natural materials and incorporated many wooden elements.

Nursery

The grow-out facility consists of 56 tanks and is divided into two rearing stages. The nursery, where the juveniles are kept, is located on the upper floor. The postlarvae, which are approximately 8 mm in size, remain in the nursery tanks for about 4–5 weeks.

Grow-Out

After about 5 weeks and once they reach a minimum weight of 1 gram, the animals are transferred to larger tanks, where they continue to grow until harvest. The 35,000–70,000-liter tanks are now their home for about 15 weeks until they reach a maximum weight of 35 grams.

Quality

PROCESSING & DISTRIBUTION

Harvest

The animals are cared for using a sophisticated technical process under optimal water conditions and with virtually no external interference. The animals are never handled by hand or with a net, as Styrian mountain shrimp are extremely sensitive.

The animals are stunned and euthanized using hypothermia, according to a method developed in collaboration with the Alfred Wegener Institute, which has been reviewed and approved by the Office for Animal Welfare and Animal Husbandry.

Not all mountain shrimp are the same size, which is why they are sorted into different sizes.

Packaging & Shipping

The Styrian mountain shrimp are then immediately packaged using MAP technology in our in-house processing facility, picked according to customer orders, and shipped to our customers as quickly as possible in sustainably cooled cardboard packaging.

Styrian mountain shrimp are primarily shipped fresh, and thanks to our central location, they reach our customers—both in private households and in the foodservice industry—as quickly as possible. This also reflects the company’s commitment to sustainability.
