The true Arctic char, Salvelinus alpinus, is genetically the oldest freshwater fish; it survived the Ice Age and grows particularly slowly. The fillets are hand-filleted in Trim D, without the belly section and without the backbone. The lateral bones are present; due to the pre-Rigo processing, it is not possible to remove them. This delicate Arctic char fillet is particularly well-suited for pan-frying, poaching, and grilling!
